Lomo Saltado Recipe - Peru’s Iconic Stir-Fry

French fries or Peruvian potato fries (homemade or store-bought)

Cooked white rice, for serving


Instructions

1. Marinate the Beef:

In a bowl, combine beef strips, 1 tbsp soy sauce, salt, and pepper. Let it marinate for about 10–15 minutes.

2. Prepare the Fries:

Fry or bake your potato fries until golden and crispy. Set aside.

3. Stir-Fry the Beef:

Heat 1 tbsp oil in a wok or large skillet over high heat. Quickly stir-fry the beef until browned but not overcooked (about 2 minutes). Remove and set aside.

4. Cook the Vegetables:

Add another 1 tbsp oil to the pan. Sauté onion and ají amarillo until slightly softened. Add garlic and cook for 30 seconds.

5. Add Tomatoes and Sauces:

Toss in tomato wedges, remaining soy sauce, and vinegar. Stir gently for 1–2 minutes until the tomatoes soften slightly.

6. Combine Everything:

Return the beef to the wok, toss in fries, and mix everything together for another minute. Adjust seasoning with more salt, pepper, or soy sauce if needed.

7. Serve Hot:

Plate with steamed white rice on the side and garnish with fresh cilantro.
